If you could only have ONE cookbook, this would be the one to have. If you can read, you can cook using this cookbook. It has everything about every kind of food and ingredient and explains why you use something, what you can and cannot substitute, what happens with variations, and what to expect as you follow the directions. This is my favorite cookbook to give as a gift to a college student moving into their first apartment, newlyweds, etc. This is the bible of cooking – as simple or as complicated as you care to get. Very easy to follow directions, too.
